We can finally say spring is on its way because the last few days of been wicked nice. While the Midwest doesn’t get the ‘5th’ season like New England, it is still quite a sloppy mess with puddles of water and such. What am I saying? Puddles of water… have I gone wimpy? For those of you who don’t know what I’m talking about, the 5th season back home is called mud season. And this isn’t just a little mud on the highway; this is slow moving mud that has been created from the great mountain thaw and has been known to move cars off the side of the road. It is mud that consumes you and the ones you love.
Ok, that’s taking it too far, but yea, you will need a pair of shit kickers up to your knees to make it through. And yes, you may want to carry small pets and children instead of letting them get sucked into the mud. Don’t worry – it won’t hurt them, but it will do a number on your nice pretty white carpets.
Anyhow, spring is here in Wisconsin and I couldn’t be happier. That means the windows open, the grill comes out, the boat gets dusted off and best of all, we get to spend hours upon hours in the great outdoors! No more cabin fever! This is where an electric pressure cooker comes in handy! I literally set it to the time; it builds the pressure for me and then cooks my stuff, then slowly releases the steam and then keeps my food warm; all while I’m outside frolicking in mud puddles!
Now, onto chicken tacos! We usually defrost the chicken, cut it up, cook it up in some olive oil then we add the taco seasoning and water, let it simmer and then we put it in the food processor and chop it up. There is NOTHING wrong with this, and it turns out delicious. But it also takes some time, and I wasn’t willing to give up that precious time outside! Another way would be to use the slow-cooker, which is another way that the chicken will turn out amazing. Too bad I didn’t think of that 8 hours earlier, right? So, I figured out an even better way that the meat turns out so fall-apart delicious you will never want to cook it any other way!
- (2) Frozen or thawed chicken breasts
- 1 package of taco seasoning
- ½ cup of water
- Taco shells or flour tortillas
- Taco toppings of your choice
This is so easy!
- Put the chicken breasts in the electric pressure cooker.
- Mix ½ water and taco seasoning together and pour over chicken.
- Close the lid and secure the pressure gauge and set the machine to the chicken setting
- Walk away and go enjoy the awesome weather!
- Allow a natural release so that you don’t get taco juice all over your cabinets!
- Shred the chicken and build your tacos.
- Eat & enjoy!
Wicked easy, right? There are so many recipes that you can convert into cooking with the pressure cooker! Why would you want to do that? Well, first and probably most important for some is that it is quick and easy. A main reason for me is because the liquid that you choose infuses into the meat making it really tasty and never dry, much like you get from a slow-cooker.
